VINIFICATION
Manual harvesting in boxes at the end of August, pressing of whole grapes and extraction of the free-run must, natural fermentation. Wine cooling before the sugars are depleted and full maturation on the lees during winter. Direct bottling on the third new moon of the year following the harvest without dosage. Secondary fermentation with spontaneous depletion of the grape’s native sugars preserved by the winter cold.

CHARACTER
Appearance: opalescent ochre yellow, “Colfondo” in the bottle
Aroma: rich and fruity with hints of yeast and citrus wood
Taste: pleasant, fresh and sapid
Recommended with: perfect with aperitifs, fish tartare, starters, smoked fish, savoury pies
