Wheat is the natural habitat of the Calandra, a bird from the lark family so commonly seen in our region, which is well-known not only for its wheat, but also for being the only place where our very own Bombino Bianco is produced.

Planting density: 4000 plants per hectare
Average grape yield per hectare: 90 quintals (9000 kg)

 

TERROIR

Production area: Troia (FG), Puglia
Altitude: 439 metres above sea-level
Soil characteristics: chalky tufa-rich, medium texture
Harvesting period: mid-September

 

VINIFICATION

White wine vinification process, soft vacuum pressing, temperature controlled fermentation process at 15° C, aged for 6 months in steel followed by 3 months in the bottle.
Alcohol content: 12,5% Vol.

 

CHARACTER

Appearance: Straw-yellow, with faint green reflections.
Aroma: floral, fresh, fruity notes, vanilla and spices at the finish.
Taste: good balance of freshness and softness, intense with a long, elegant finish.
Recommended with: seasonal vegetables, light first courses and white meat or fish-based second courses.
Serving temperature: 9°-13° C
